Festive mandarin and beet salad
This tasty festive salad will quickly become a #halfyourplate holiday favourite for your family!
For the salad:
- 4 cups arugula
- 2 mandarins, peeled and segmented
- 4 pre-cooked beets, chopped
- ½ cup pomegranate seeds
- 2 oz feta cheese, crumbled
For the dressing:
- ¼ cup white wine vinegar
- 1 clove of garlic, crushed
- ¾ cup olive oil
- 3 tbsp grapefruit or lemon juice
- 3 tbsp orange or mandarin juice
- Salt and pepper to taste
Whisk together all salad dressing ingredients and set aside. Toss arugula into a large bowl and top with mandarin segments, and beets. Toss with dressing. Sprinkle with pomegranate seeds and feta before serving. Serves 4-6.
