Ingredients
  

  • 20 cherry tomatoes halved
  • 1 cup arugula
  • 2 tbsp Gourmet Garden Fresh Blends Mediterranean
  • 3 tbsp olive oil
  • 1 cup pine nuts toasted
  • 10 small bocconcini balls or Mozzarella balls, halved
  • 1 red onion thinly sliced
  • 10 black olives sliced

Instructions
 

  • In a small bowl or jug, whisk together Gourmet Garden Fresh Blends Mediterranean and olive oil.
  • In a large salad bowl, combine arugula, cherry tomatoes, bocconcini and red onion.
  • Pour dressing over salad and toss to combine.
  • Serve topped with pine nuts
