February is PEI Potato Lovers Month!
Did you know that February is PEI Potato Lovers Month in Canada? Potatoes are the most consumed vegetable in Canada, and it’s about time we celebrate them! Potatoes are high in potassium, and are a heart healthy choice when consumed in moderation.
PEI Potatoes are available in grocery stores across Canada and are incredibly versatile, making them easy to include in some of your meals! Potatoes are available in a broad range of colours and sizes, and should be selected based on what you want to cook. So how do you select the right potato for you? The most important thing is knowing the starch level of the potato, as it determines how it will react to baking, roasting, or mashing. PEI Potato and Leek Soup
3 large PEI Yukon Gold Potatoes, peeled & large dice
2 tbsp Olive Oil or Butter
2 cups Leeks, washed and chopped
2 each Garlic Cloves, chopped
1 medium Onion, chopped
1 tbsp Summer Savory, dried
¼ cup All Purpose Flour
5 cups Chicken Stock, Vegetable Stock or Water
½ tbsp Fresh Thyme, removed from stems
1 cup Milk
to taste Salt & Pepper

6 PEI Red-Skin Potatoes, quartered
½ cup Olive Oil
¼ cup Fresh Basil or Rosemary, chopped
1 large Yellow Pepper, cut into 1” pieces
1 each Red Onion, cut into 1” pieces
to taste Salt & Pepper
