Avocado Toast with Watermelon

Ingredients
  

  • 1/4 cup Avocado mashed and mixed with 1/2 tsp of lemon juice
  • 2 slices Whole Grain Artisan Bread toasted
  • 1/4 cup Watermelon diced
  • 2 tsp mint fresh, chopped
  • 1/2 tsp Lemon Zest
  • 2 tbsp Low-Fat Feta Cheese crumbled

Instructions
 

  • Spread half the avocado on each slice of the toasted bread, top with half of the watermelon and cheese, then sprinkle with half of the mint leaves and lemon zest.
