It’s Nutrition Month!

For Nutrition Month we’ve partnered with the Dietitians of Canada to encourage Canadians to eat healthier – one meal at a time! One of the most challenging meals can be lunch, especially with all the fast food options we have today. You may not realize it, but making your lunch is actually the fastest and healthiest option. All you need is a little bit of planning and some great recipes!

iStock_000004745725LargeOur simple stir fry makes a quick dinner with plenty of leftovers! Make a double batch on Sunday and start your week with some tasty leftovers.

Not only is kale packed with nutrients, it is hearty enough to stand up to salad dressing. You can make kale salad for several days and dress it without having to worry about wilting. Check out this great kale and apple salad recipe via Cookie and Kate. Add chick peas or other beans to your salad to make them more filling.

Leftover roasted veggies? Turn them into a tasty sandwich. Heat up leftover veggies in the microwave, sprinkle with parmesan cheese and place on a bun with some Dijon. A tasty and easy lunch!

Make your own salad bar at home! Prep and chop some veggies on Sunday (think carrots, cherry tomatoes, cucumber, celery, bagged spinach etc.) and roast off some chicken breasts and chop. Monday-Wednesday you’ll have your own salad bar ingredients ready to pack!
