SUNSET® Y.E.L.O.™ Spring Salad
Ingredients
- 1 10 oz pkg Y.E.L.O.™ tomatoes, cut into wedges
- 4 cups Torn Radicchio
- 1/3 cup crumbled blue cheese
- 1/4 cup toasted pumpkin seeds
White Wine Vinaigrette:
- 1/4 cup Olive oil
- 3 tbsp White wine vinegar
- 1 tbsp Honey
- 2 tbsp Salt
- 1/4 tsp Freshly ground pepper
Instructions
- Directions: Dressing: Whisk together olive oil, vinegar, honey, shallot, salt and pepper until combined. Toss tomatoes, radicchio and arugula. Sprinkle with blue cheese. Drizzle with 1/4 cup dressing, adding more to taste, if desired. Sprinkle with pumpkin seeds.
