SUNSET® Y.E.L.O.™ Spring Salad

Ingredients
  

  • 1 10 oz pkg Y.E.L.O.™ tomatoes, cut into wedges
  • 4 cups Torn Radicchio
  • 1/3 cup crumbled blue cheese
  • 1/4 cup toasted pumpkin seeds

White Wine Vinaigrette:

  • 1/4 cup Olive oil
  • 3 tbsp White wine vinegar
  • 1 tbsp Honey
  • 2 tbsp Salt
  • 1/4 tsp Freshly ground pepper

Instructions
 

  • Directions: Dressing: Whisk together olive oil, vinegar, honey, shallot, salt and pepper until combined. Toss tomatoes, radicchio and arugula. Sprinkle with blue cheese. Drizzle with 1/4 cup dressing, adding more to taste, if desired. Sprinkle with pumpkin seeds.

Chef’s Notes: Refrigerate leftover dressing in airtight container.
